Biscotti with coffee, chocolate and almonds
For : 16 serving.
Calories : 202 per serving.

Ingredients :
1 3/4 cups
flour

2/3 cup
cocoa powders not-sweetened

1 table spoon
instant coffee

1 tea spoon
bicarbonate of soda

1 ???
salt

3/4 cup
almonds not bleached, but chopped and roasted

125 grams
semi-sweetened chocolate, coarsely chopped (4 oz)

1 cup
sugar

1 tea spoon
vanilla


Directives :
Grill the almonds on a stove for few minutes, then chop the almonds.
In a large bowl, mix the flour, the powder of cocoa, the instant coffee, the bicarbonate and the salt. Add the almonds and the chocholat, then mix.
In another bowl, using a whip, beat three eggs until they are sparkling. Add sugar gradually while whipping. Add vanilla, and then mix again.
Pour the second bowl (with the egges) into the first one. Mix everythings using a wooden spoon until the paste is firm.
On a chopping board covered slightly with flour, shape the paste in a rectangle of 9 inches X 5 inches. Using two spatulas, deposit the rectangle on a hotplate covered parchment paper.
Beat the remaining egg and brush the paste with it.
Cook in the owen at 350oF during 30 minutes.
Get it out and let cool 15 minutes.
Using two spatulas, slip the paste on a chopping board. Using a notched knife, cut the paste in sections of 1 cm thickness (3/8", should gives 16 pieces).
Put back the paste on the hot plate while placing them upright and continue cooking during 20 minutes or until the biscotti are firm.
